Recipe: Apple Cinnamon Muffins

Happy Sunday lovely! How has your weekend been? I made these yesterday as well as lasagna for dinner last night and if you’re looking to do some baking today, make these! I promise you will adore them – they make your home smell like heaven, and they taste amazing! Plus, they’re healthy too!

Ingredients

2 cups of self-raising whole wheat flour

2 teaspoons of plain flour for coating the apples

2 teaspoons of ground cinnamon (+ 1 teaspoon for coating apples)

1 teaspoon of ground all-spice

2  diced apples (I used Granny Smith without the peel)

½ cup of butter at room temperature

1 cup of brown sugar

2 large eggs

2 teaspoons of vanilla extract

½ cup of milk

Method

Preheat oven to 180c and put muffin cases into a tin.

Toss together diced apples, flour and cinnamon to coat apples in a separate bowl. Set aside.

Cream together butter and sugar until lightened in colour and well mixed. Add in each egg, one at a time, make sure each one is fully incorporated before adding the next then mix in vanilla.

Gently fold in flour, cinnamon and allspice mixture, and the milk. Stir until just combined. Fold in diced apples and scoop mixture into muffin cases. Bake until a skewer inserted in the middle comes out clean, about 30 minutes or an episode and a half of Friends.

In a bowl, mix together half a cup of brown sugar with a teaspoon of cinnamon. Sprinkle over the top of the muffins whilst still warm for a little extra sweet crunch. Enjoy warm or cold with tea and an episode (or twelve) of your current binge watch.
