The Best Chocolate Chip Cookies EVER
Happy Monday loves! How was your week? I’ll be honest, mine was a little stressful. New job overwhelm but watching Baywatch on Friday (if you haven’t seen it, go NOW!), dinner with friends on Saturday and baking yesterday was exactly what I needed!
For years, I have been trying to make the perfect chocolate chip cookies, and y’know what? I think I might have it cracked! These babies are soft, chewy and so unbelievably moorish, I may have eaten 2 already today! I mean, c’mon! How can you blame me when they look this good?!
1/2 cup butter, softened at room temperature
1/2 cup cream cheese, softened at room temperature
1/2 cup caster sugar
3/4 cup brown sugar
1 large egg
1 tsp vanilla
1 1/2 cup and 1/3 cup plain flour
2 tbsp cornflour
1/2 tsp baking soda
1/2 tsp kosher salt
1 cup milk chocolate chips + 1/2 cup of white chocolate chips
In a bowl, cream the butter and cream cheese until thoroughly mixed. Mix in the caster and brown sugars until fully incorporated then beat in the egg and vanilla and mix thoroughly again.
In a separate bowl, sift together the flour, cornstarch, baking soda and salt. Add this a little at a time and whisk slowly until just incorporated then fold in the chocolate chips.
Cover the mixing bowl with plastic wrap and chill in the refrigerator for at least 1 hour (This bit is optional but works a treat if you have time).
Preheat the oven to 200c.
Use an ice cream scoop to scoop out the dough and roll into a ball. Place the cookie dough on the tray with about 8 per cookie sheet. Bake for 10-15 minutes, rotating the trays halfway through to ensure even baking.
When the cookies are golden brown on top and a nice amber colour on the bottom, remove the tray from the oven and allow the cookies to settle for a few minutes as they will be very soft to start. Gently transfer to a wire rack to cool then attempt not to consume every single one immediately.
As a note – I have also made this with GF flour and they taste amazing – just sub the plain flour for GF and you’re good to go!
Now, I’m going to figure out the perfect amount of ice-cream to make an ice-cream cookie sandwich!
